Chocolate Quinoa Breakfast Bowl (or mug!)

Chocolate and quinoa pair up in this easy-to-make dish that can be eaten for breakfast or as a post-ride meal.

Ingredients

3/4 - 1 cup cooked quinoa

2/3 - 3/4 cup milk of choice (I used flax milk)

1 Tbsp cacao powder

1 Tbsp maple syrup

Fruit of choice (Bananas and berries make a great pair)

Choice of toppings (Cacao nibs, hemp seeds, and/or nuts and seeds)

Directions

First, meal prep some quinoa when you have time during the week/weekend. (It only takes 15 minutes!)

To Prep Quinoa - Add 2 parts liquid to 1 part quinoa. Bring to a boil, reduce heat, cover, and let simmer for 15-20 minutes, or until quinoa is light and fluffy. Remove from heat and let rest for 5 minutes.

When ready to eat, add cooked quinoa and milk to a bowl. Heat in the microwave for 1.5 minutes.

Add the cacao powder and maple syrup. Stir until dissolved.

Top with your choice of fruit (bananas and berries 👌) and toppings to make a nutrient rich-dish.
