๐Ÿ‡ฎ๐Ÿ‡น Italian Fruit + Ricotta Toast ๐Ÿž

A super easy breakfast, snack, or even dessert that can be made in under 10 minutes. Creamy ricotta is paired with ciabatta toast, fresh berries, and a drizzle of honey for a satisfying bite.

Ingredients

Two slices of ciabatta

1 Tbsp extra-virgin olive oil

1 Tbsp coconut sugar or cane sugar, divided

1/2 cup ricotta

1/2 tsp vanilla extract

3/4 cups mixed fresh berries or fruit (Strawberries, blackberries, raspberries, blueberries)

Honey, for drizzling

Flaky sea salt, for sprinkling

Mint leaf for garnish

Directions

Toast the ciabatta slices. Brush both sides of the ciabatta with olive oil, then sprinkle both sides evenly with 1/2 Tbsp of sugar.

In a small bowl, mix together the ricotta, vanilla, and the remaining 1/2 Tbsp of sugar.

Divide the ricotta mixture among the toasts and spread evenly. Top with berries, drizzle with honey, sprinkle with flaky sea salt, and garnish with a mint leaf.
