Ride Pies, BIG Ride, and Team Feast with The Team Summit Youth MTB Program

Fueled by past community fundraisers and baked goods sales, Biked Goods teamed up with the Team Summit youth MTB program to host a BIG ride and FEAST.

We started the day together with a quick nutrition and baking lesson by making our own ride pies. (See recipe below).

From there we hit the trails for a big ride on the Colorado Trail.

Lunch featured Homemade Bitchin’ Sauce, Chickpea Sandwich Spread, Southwest Quinoa Salad, Apple + Green Pepper Salad, and plenty of fresh fruit.

And last but not least, we enjoyed homemade cookies made fresh by Mountain Mouse Cookies in Dillon, CO.

Results from our BIG Ride and Feast,

  • 18+ miles and 2,400+ ft vertical gained on our route

  • 10 ride pies made

  • 12 group riders and hungry mouths fed

About The Team Summit Youth MTB Program

The Team Summit Youth Mountain Bike program aims to provide safe, fun, and enjoyable experiences to help develop athletes into lifelong cyclists.

They provide day trips, team camps, skills clinics, downhill park days, and summer programming to provide a variety of benefits to athletes such as exploring new trails in Summit County, meeting new friends, and building skills and fitness.

Their mission is to elevate youth athletes and empower them to realize and celebrate their personal podiums through athletics, education, and life skills by participating in innovative programming.

Simple Sliced Ride Pies

Make your own ride pie for your next big ride or adventure. Recipe comes from the Biked Goods cookbook.

Ingredients

2 pieces of soft white bread per pie

1 heaping Tbsp of spread per pie - Jam, nut butter, apple butter, homemade chocolate spread

Add-ins: Banana slices, diced apple, chopped dates, dried strawberries, diced nuts

Water for sealing edges

Melted butter or coconut oil for brushing on top

Directions

Preheat the oven to 350°F. Add a heaping spoonful of filling and toppings to one piece of bread and brush water around the edges to help seal. Top with the other slice of bread. Repeat for the remaining pieces of bread.

Using a rimmed glass or mason jar, press the two crusts together to cut your pie. Seal edges with your fingers. Brush the top of the pies with melted butter or coconut oil and place it on a lined baking sheet. 

Bake for 10-15 minutes or until bread is toasted and golden brown. Wrap in Skratch Paper and grab it when ready to ride with your pie.
